Cooking for family and friends has been a passion long passed down to me from my mother, Remy, over the years. Her and I have always found any excuse to throw a party or host brunches at our home together. We craved the satisfaction of feeding our loved ones. Whether it was old family recipes or new experimental dishes, they always welcomed our meals. We dreamed of opening a little mom and daughter diner some day, but with no professional training, we were scared. Then the food truck movement exploded and I knew immediately it was right up our alley. After two years of searching for used food trucks and bouncing menu concepts back and forth, we realized how innovative we could be with grilled cheese sandwiches. Shortly thereafter, "Say Cheese!" was born.
